I will be taking one roll-on bag and a small soft sided cooler as my only baggage. Each of the AirBNBs have washers and driers so we will be able to throw a load in as needed while we travel. We don't plan to have any refrigerated foods but the cooler will allow us to buy something during our travels if we want. We can heat water for drinks and use the ice water in the train to round out the drinks. We can always buy food & drink on the train if needed/wanted.

My roll-on bag contains 2 changes of clothes, toiletry bag, hot-water-heating-pot, thermos, baby wipes, Tupperware food container, Hoody to wear over my layered thermals, over-shirt...when we are outdoors for short period of time & a small travel pillow. I have a small cloth bag I can use for an overnighter when we leave the larger bag in depot baggage storage during our overnight stops. I also have a medium blanket that fits over everything before closing the bag. The front outside of the bag has a couple zippered compartments for electronics, books.... I have some small luggage locks to keep the honest folks honest when the bag is out of my site, Electronics will never leave my side.
My Tupperware food container has an assortment of strange canned goods (cause many are likely to be inedible. We'll open one and give it a taste and finish it if it's ok but open a second one and toss the previous if it's inedible (I'm a little pessimistic about canned-chicken-bologna) (mustard for everything). I also have jerky, bullion cubes for hot drinks, dried bananas, almonds, instant coffee, a couple Indian food pouches, tortillas and 2 pints of my canned meatballs, a couple plastic pints of Wish-Key for medicinal purposes
 My small soft sided cooler is big enough to hold almost a 12-pac of soft drinks and is well insulated. We don't plan to use it much but will take it in case we pick something up along the way. It will collapse and fit inside my roll-on bag if I don't need it. it has a zippered compartment on the front that is large enough to hold my iPad and charging cords or whatever else I choose to use it for. Initially I will carry a quart of pickled eggs and dried food items in it. There will be more and more room in the roll-on bag as we deplete the food from it and I can store the insulated bag inside of it if needed. I might even use it for my overnight bag if we don't have any refrigerated stuff in it.
